Ingredients 1 recipe pastry for a 9 inch single crust pie ¾ cup white sugar ¾ cup all-purpose flour 6 tablespoons butter
1 pinch ground nutmeg 4 cups fresh strawberries, hulled ½ cup white sugar ½ cup all-purpose flour 1 tablespoon cornstarch
Directions Heat oven to 400°F (200°C). Put a drip pan on the lowest shelf to capture pie juices.
To make topping: Mix 3/4 cup sugar, 3/4 cup flour, butter, and nutmeg in a medium bowl until frothy.
In a deep basin, place cleaned strawberries. Mix 1/2 cup sugar, 1/2 cup flour, and cornstarch in another basin. Avoid crushing berries as you coat them with this mixture.
The berries will sink as they bake, so pile them in the pie shell. Scatter crumbs over berries and add 15 pea-sized butter blobs. Cover pie crust edges with foil to avoid scorching.
Continue baking pie at 375 degrees F (190 degrees C) for 40 minutes after 20 minutes in preheated oven. With 10 minutes left, sprinkle additional sugar over crumb topping and complete baking.
